Variation of Cuisine
iki「活」 series
Name of cuisine using ikiebi「活海老」, is entitled by iki「活」; ie iki-tendon「活天丼」.
don or Tendon series
Rather a big rice bowl(don) on which a tempura is put with a special sauce. Tempura of prawn called tendon is popular in don series.
Unagi series
Cuisine is used by boield eel with a special traditional sauce.
The Hamana Lake is the most famous with Unagi even in Japan.
Sashimi series
Sliced raw fish dished up beautifully is taken with dipping a soy sauce.
Tempura series
Deep fried fish and/or vegetable with traditional coat and taken with dipping tempura sauce.
Fry series
Main food cooked by deep-frying with bread-crum coating in Japanese healthy oil.
Teishoku series
Teishoku is not food but a general way of calling set of Japanese food; main food with rice, miso soup, pickles sometimes dessert etc.
